Yield: 1 Pancake
Ingredients & Quantity:
Part 1
• Avocados 2
• Whole eggs cracked, shelled and whisked (like for scrambled eggs) 2
• Milk 1/2 Cup
• Melted Butter 2 Tbls
• Dungeness Crab 1 Oz
Part 2
• Flour 1 Cup
• Baking Powder 3/4 Tsp
• Sugar 1 Tsp
• Salt to taste
• Pepper to taste
Preparation:
Beat all the ingredients together in section one. Add all of the ingredients from section 2 and continue to mix. Cook the pancake over medium heat with 2 Tsp of butter in a Teflon pan for approximately 2 min per side.
Garnish with fresh salsa and sour cream.
