Born and raised in North Carolina, Chef Amick has been living in Eagle County for almost three years, and has worked in progressive cuisine for 25 years. Growing up surrounded by agriculture, he began his education at an early age by weeding the family 4 acre garden, picking and preserving fruits and vegetables, making hams and sausage with his grandparents. After a two year apprenticeship, he went on to work in fine dining, with a strong focus on classical cuisine first, and progressive cuisine afterwards. His food respects tradition while thinking outside of the box, to put a unique and interesting spin on anything that needs it.

His menus focus on locally sources, organic and sustainable ingredients with an approach that allows these ingredients to shine on their own with minimal manipulation.
