Two Elk Recipes
1 Cup Organic Whole Wheat Bran
1 Cup Organic Milk
1 Cup Maple Syrup
2 ea. Eggs
7 oz. Canola Oil
2 1/4 Cups Organic Whole Wheat Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
1/2 Cup Chopped Walnuts (Optional)
Maple Glaze
2 Tbsp. Butter
1 Cups Powdered Sugar
2 Tbsp. Maple Syrup
Method:
1) Combine the bran, milk, syrup, egg and oil. Mix together thoroughly.
2) Measure the dry ingredients in a mixing bowl. Make a well in center. Fold in liquid mixture. Mix together until just moistened. Do not over mix.
3) Bake at 350 degrees for 12-15 minutes.
Maple Glaze:
Melt butter on low heat. Whisk in powder sugar and maple. Add more butter and maple for consistency. Drizzle over muffins before service.
