Blue Moose Pizza Vail Recipes

Blue Moose Autumn Pizza on Whole Wheat Crust Prepared for

Autumn Pizza:
24 oz Pizza Dough
6 oz Sautéed Crimini Mushrooms
6 oz Goat Cheese
½ oz Truffle Oil
1 oz Shredded Parmesan Cheese
.1 oz Chopped Parsley

Whole Wheat Pizza Dough Ingredients:
1 Package Active Dry Yeast
1½ tsp Honey
1 c Warm Water
3 c Organic Whole Wheat Flour
1 tsp Salt
4 tsp Olive Oil
2 tbsp Dry Basil

Sautéed Crimini Mushrooms:
1 lb Sliced Crimini Mushrooms
2 oz Virgin Olive Oil
1 oz Fresh Chopped Garlic

Whole Wheat Pizza Dough Directions:
Prior to making your Whole Wheat Dough, it will be necessary to hydrate your wheat flour. This is done by taking half of the called for water in the recipe and adding to your whole wheat flour and allowing to stand in a separate bowl while preparing other ingredients. In a separate bowl, dissolve yeast and honey in the remaining water. Once dissolved, add salt, olive oil, and basil to yeast, honey, water mixture and gently mix together. Once a healthy mixture is obtained, carefully add hydrated flour to liquid mixture and allow to blend thoroughly. Cover and allow to stand for approximately 30 minutes while dough rises. Meanwhile, preheat oven to 350˚F/175˚C.

Sautéed Crimini Mushrooms:
Sauté mushrooms in olive oil and garlic, cooked over medium heat to avoid burning.
Once sautéed, mushrooms should be allowed to stand until cool to touch prior to using.

Autumn Pizza:
Begin, by throwing your pizza dough into the desired shape and size. Prior to the application of any of the listed toppings, it will be necessary to dock your pizza dough to eliminate any air bubbles. After stretching pizza dough to desired shape and docking, generously apply sautéed mushrooms directly to top of dough. Once mushrooms have been evenly distributed to pizza, generously apply goat cheese to top of mushrooms. Upon applying all of the desired toppings, you’re ready to cook. After pizza is baked, sparingly apply Truffle oil to top of pizza. Lastly, sprinkle Parmesan and parsley mix to top of pizza. You’re ready to eat!
