Crispy Brussels Sprouts

2 Cups – Brussel sprouts (cleaned, halved and blanched)
3 Tbsp – Smoked maple Gastrique (equal parts smoked maple syrup and apple cider vinegar reduced by half) use extra smokey bacon in place of cold-smoking the maple syrup
2 Tbsp – Crispy Bacon (minced)
Sea Salt to taste

1. Fry Brussels at 350 until golden brown.
2. Drain on paper towel then toss with gastrique, bacon and season with salt.
