Pankaj Bisht

Born and raised in Delhi, India, Chef Pankaj Bisht brings more than 18 years of global culinary experience to his role as Chef de Cuisine The Remedy at Four Seasons Resort and Residences Vail. His culinary journey began with an apprenticeship at Le Meridien New Delhi, followed by formative roles at renowned luxury hotels including The Oberoi New Delhi, One&Only Royal Mirage Dubai, and Jumeirah Emirates Towers.

Chef's career accelerated in the UAE, where he helped shape several of the region’s most celebrated steakhouses. At Waldorf Astoria Ras Al Khaimah’s Lexington Grill, he contributed to the team’s win for Best Restaurant Team at the Caterer Awards Middle East (2016) and Best Steakhouse at the BBC Good Food Middle East Awards (2015). He later joined Four Seasons Hotel Abu Dhabi as Sous Chef at the acclaimed Butcher & Still, where the restaurant earned repeated recognition, including multiple Best Steakhouse awards and placement on the Gault Millau Awards and World’s 50 Best Restaurants lists.

In 2022, Chef Bisht relocated to Colorado to join Four Seasons Resort Vail. As Chef de Cuisine, he oversees culinary operations at The Remedy. His approach blends refined technique with a deep appreciation for seasonal mountain ingredients, creating dishes that honor Four Seasons’ commitment to quality, craftsmanship, and warm hospitality. A decorated chef, Bisht has earned numerous awards, including Best Pork Belly at the 2023 Taste of Vail competition.

The Remedy serves modern mountain cuisine with a focus on fresh, seasonal ingredients and craft cocktails.
