GEOFF COX
Chef Cox is a classically trained and highly regarded culinary talent with deep roots in the Denver food scene. A graduate of the Cook Street School of Culinary Arts, he has built a diverse and accomplished career across several of Colorado’s most respected kitchens, including Z Cuisine, Fuel Café, and most notably, Hop Alley—where his nearly decade-long tenure contributed to the restaurant’s recognition as a James Beard semifinalist in 2020, and a Michelin Bib Gourmand in 2023, 2024, & 2025. This past year he collaborated with world renowned Peruvian chef Diego Munoz to open Cimera on the rooftop of Denver's The Source Hotel. Geoff’s approach to cooking is grounded in precision, thoughtful technique, and a deep appreciation for culinary traditions such as curing, fermentation, and brining. As a Chef, he brings a creative bespoke dining experience that is as intentional and refined as they are warm and inviting. His passion lies not just in the food itself, but in the power of shared meals to connect people and create lasting memories.
